How to make mango pickles and hairmich pickle at home

 Mango Pickle

Mango pickle is a popular Indian condiment made with green mangoes, spices, and herbs. It is a delicious and versatile pickle that can be enjoyed with a variety of dishes, such as rice, roti, or paratha.

There are many different recipes for mango pickle, but here is a basic recipe that you can follow:

Ingredients:

* 2 green mangoes, peeled and diced
* 1 teaspoon turmeric powder
* 1 teaspoon salt
* 1/2 teaspoon red chili powder
* 1 tablespoon mustard seeds
* 1 tablespoon coriander seeds
* 1 tablespoon cumin seeds
* 1 teaspoon fenugreek seeds
* 1/2 teaspoon asafoetida powder
* 1/4 cup oil
* 1/4 cup vinegar

Instructions:

1. In a bowl, combine the mangoes, turmeric powder, salt, and red chili powder. Mix well.
2. In a separate pan, heat the mustard seeds, coriander seeds, cumin seeds, fenugreek seeds, and asafoetida powder over medium heat until they start to crackle.
3. Add the oil to the pan and heat until it is hot.
4. Add the spice mixture to the oil and fry for a few minutes, or until fragrant.
5. Add the vinegar to the pan and bring to a boil.
6. Pour the hot vinegar mixture over the mangoes and mix well.
7. Let the pickle cool completely before storing it in an airtight container in the refrigerator.

Hairmich Pickle

Hairmich pickle is a traditional Gujarati pickle made with raw mangoes, spices, and herbs. It is a delicious and spicy pickle that is perfect for a hot summer day.

Ingredients:

* 2 raw mangoes, peeled and diced
* 1 teaspoon turmeric powder
* 1 teaspoon salt
* 1/2 teaspoon red chili powder
* 1 tablespoon mustard seeds
* 1 tablespoon coriander seeds
* 1 tablespoon cumin seeds
* 1 teaspoon fenugreek seeds
* 1/2 teaspoon asafoetida powder
* 1/4 cup oil
* 1/4 cup vinegar
* 1/4 cup hairmich (a type of sour yogurt)

Instructions:
